  • 3 Earth Candy preserved lemons

  • 1/4 cup extra virgin olive oil (and some to cover the bottom of the cast iron skillet

  • 1 lb Mahi Mahi (two fillets)

  • A pinch of kosher salt and coarse black pepper



  • Preheat oven to 450 degrees.

  • Put enough oil to cover the bottom of a cast iron skillet and heat on low.

  • Place lemons, extra virgin olive oil, salt and pepper in blender or food processor and blend until creamy.

  • Place fish in cast iron skillet, once heated, and top with sauce.

  • Cover with foil and bake for 15 minutes.

  • Remove foil and bake for another 5-10 minutes, until the blended lemons are golden brown.

  • Serve immediately.
