3 Earth Candy preserved lemons
1/4 cup extra virgin olive oil (and some to cover the bottom of the cast iron skillet
1 lb Mahi Mahi (two fillets)
A pinch of kosher salt and coarse black pepper
Preheat oven to 450 degrees.
Put enough oil to cover the bottom of a cast iron skillet and heat on low.
Place lemons, extra virgin olive oil, salt and pepper in blender or food processor and blend until creamy.
Place fish in cast iron skillet, once heated, and top with sauce.
Cover with foil and bake for 15 minutes.
Remove foil and bake for another 5-10 minutes, until the blended lemons are golden brown.
